Old Fashioned Cocktail with Liquid Chocolate Drink Recipe

Lee from The Living Room, Manchester twists a classic Bourbon Old Fashioned Cocktail Hotel Chocolat's Orange Liquid Chocolat.
Recipe & Directions
- 3 bar spoons Orange Liquid Chocolat and 2 bar spoons of hot water stir until you have a thick paste.
- Add ½ shot of Woodford Reserve Bourbon.
- Add 2 ice cubes and stir until melted.
Repeat this 4 times
- Add dash angustora bitters (more for extra spice)
- Stir
- Garnish with orange zest.

Open a bottle of wine badly, and you'll likely end up with bits of cork for your guests to chew on as they sip. Save yourself the embarrassment by watching Food and Wine magazine's Senior Wine Editor, Ray Isle, show you how to open a bottle of wine like a pro.

The corkscrew:
Ray demonstrates opening a bottle of wine with a traditional waiter's corkscrew, which has three main parts:
* a blade (often serrated)
* a bottle opener/lever
* a screw
Opening the bottle:
1. Use the knife end to cut around the base of the capsule (the metal part) and pop off the metal cap of the wine bottle.
2. Insert the tip of the screw at an angle, with the point digging slightly into the middle of the cork. This helps prevent you from hitting the side of the wine bottle.
3. Then put it straight in and begin turning the corkscrew while pointing the opposite end straight up so you can place your hand over the top.
4. Twist the corkscrew in until you can use the first notch of the bottle opener against the side of the wine bottle and push up. Twist more till you can reach the second notch or end of the corkscrew and use this notch or end against the top of the bottle to pull the rest of the cork out.

Shownotes: I am fan of the story behind the Gibson: The notion of the bartender at the Players Lounge circa 1928 lapping up the attention of the regular guest, one Charles Dana Gibson and creating something unique and special. His local fame in his day for painting pin-up girls (the Gibson Girl) was notorious.
I have read about stories that the garnish of a pickled onion in place of the olive was to disguise the non-alcoholic version for the patron as he was a tee-totaller. I don't buy into that story as it does not sound ethical but swaying more to the significance of the 2 pearl onions representing the breasts og the girls in his paintings.
Anyhow the complimentary of the bitters is optional, I used Angostusa Orange Bitters in this presentation, but it works with many others, Peychaud's, Fee Brothers Grapefruit or Lemon flavours for example. I have just received the Bitter Truth Celery Bitters an can't wait to try that one. A zest of lemon would also add to the drinks but should not over the top and just hinted.
Recipe:
6 cl Plymouth Gin
1 cl Noilly Prat Vermouth
Dash of Angustura Orange Bitters
Garnish: Pickled onions

The Manhattan - Episode 01

This is a personal favourite of mine to make and to drink, A complex drink, that is challenging to make but very worthwhile when done right. Gary Regan writes in his book The Joy of Mixology "when properly constructed, it is the finest cocktail on the face of the earth." Strong words indeed, but I am in total agreement.
The standard content is:
3 parts rye or bourbon whisky
1 part sweet vermouth
2 dashes of bitters
It can be served straight up (cocktail glass) or on the rocks. It can be Sweet (sweet vermouth, maybe extra maraschino liquor. My favourite.), Dry (dry vermouth instead of sweet.) or Perfect (Use of both sweet and dry vermouth.)
Variations of this recipe have been conjured up such as the Rob Roy, use of blended scotch instead of rye or bourbon. If one uses brandy as the spirit it becomes a Harvard. The much acclaimed Martinez is the gin variation -- this cocktail requires maraschino liquor plus usage of a very dry gin.
In the episode of the video podcast I use Buffalo Trace Bourbon, Carpano Antica Formula Vermouth, Orange and Angostura Bitters plus a maraschino liquor soaked cherry.
I used the this whisky for is spicyness and slight smoky overtones and works great with the orange bitters, the carpano 'ancient formula' vermouth is the king of all vermouths and is a robust modifier to the whisky, it can be happily drunk on its own on the rocks. The maraschino saturated cherry works fantastically well and I love the garnish. Rimming the glass with the orange zest is optional but common and is a nice touch.
